Example Recipe Idea: gluten free Chocolate Chip Cookies

You don’t have to give up everything to eat right for your mood! You can even still eat some dessert now and then. Check out this recipe for easy gluten free chocolate chip cookies!

Ingredients:

  • 2 1/2 cups finely ground almond flour
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 cup melted coconut oil
  • 1/2 cup grade B organic maple syrup
  • 1/2 cup organic mini chocolate chips

Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

Sift all dry ingredients together in a large bowl. If you don’t have a sifter, just mix the dry ingredients well.

In another bowl, combine melted coconut oil with maple syrup. Gently combine wet and dry ingredients and mix until thoroughly incorporated. Fold in chocolate chips.

Use a tablespoon to scoop dough onto cookie sheet. Place dough 1/2″ apart in rows and lightly press tops with back of fork. Bake for 12 minutes. Makes about 18 cookies.
